We almost always have an evening salad and I make a really big one so we can each have more than one serving. I recently decided to start eating salad at lunch instead of my usual sandwich or veggie burger. In my efforts to find some new fun salad recipes, I turned to Appetite for Reduction by Isa Chandra Moskowitz.

This is the Sushi Roll Edamame Salad with Green Onion-Miso Vinaigrette. I love the idea of strips of nori on top of a salad.

Here is the Goddess Nicoise salad - the mixture on the top left is a chickpea/caper mixture that is added right before serving. The Green Goddess Garlic Dressing is my favorite dressing from the book so far.

And here is my own version of kale chips. I mix the kale pieces with low-sodium soy sauce and nutritional yeast and bake at 325 until as crispy as potato chips.

My pet rabbit Bubbles also loves salads of all kinds. In fact she seems to be considering eating these lilacs!
